I got your comment about being newly veg...Hi Donna,<br />I got your comment about being newly vegan and also oil-free. Phew! That's a big change to take on all at once, for sure. Check out the McDougall diet, which is all vegan, and I believe all oil-free. They have some recipes on their site and they also have cookbooks. It's a diet designed by a medical doctor for optimal health. The recipes are sometimes on the bland side, but it could be a way to at least get you going. Can he eat healthy fats like olives and nuts and avocados? Because you can do a lot with those. And for sweets... think of fruit cobblers and dark chocolate and chocolate-tofu mousse ( which sounds disgusting, but is actually very very good and extremely rich)... good luck and let me know if you have any questions.
